A breakfast thing that I have that probably nobody else does here is goetta. It's super regional. The only real way I can describe it is a breakfast version of a british pudding (but without blood or whatever) or a loose sausage made with steel cut oats, typically served sliced and fried crispy.

Oh man! But eggs with salsa is pretty much my favorite thing for breakfast! usually along with a tortilla in burrito form, but not necessarily. Blurgh. I like eggs with like a tomatillo salsa verde or even just peppers and onions. You toss in tomatoes and you might as well eat them with ketchup.
